The Incredible Salad That Will Make Adult Eating Easier

Adulting can be hard and those ultra easy fast food or frozen dinner habits can be hard to break when you’re busy and, let’s face it, a little lazy.

There’s no time like the present to change those late night, empty calorie, expensive delivery binges! Here is one tried and tested salad that is super easy to make as well as insanely delicious.  Even better? It contains the ultra-healthy, common core super-foods of spinach, avocado, salmon and blueberries. Enjoy!

Blueberry, Salmon and Spinach Salad

  • 1 good sized piece of grilled salmon, chopped
  • 1 ripe, pitted avocado, diced
  • 4 cups baby spinach (or mixed greens)
  • 1/2 cup fresh blueberries
  • 1/4 cup light feta cheese
  • 1/4 cup chopped almonds
  • honey chia seed vinaigrette (ingredients below)

Toss all of the above ingredients together and drizzle on the honey chia vinaigrette.  You make the vinaigrette by whisking together 1/3 cup extra virgin olive oil, 2 tbsp. apple cider vinegar, 1 tbsp chia seeds, 1 tbsp. honey and a pinch of salt.
