2 Healthier Taco Alternatives

Tacos! Who doesn’t love them?

Still, if one of your New Years resolutions is to be healthier and work more veggies and less fried food into your diet, check out these two delicious, shell-less alternatives!

Taco Lettuce Wrap

What you need:

  • 1/2 lb ground turkey
  • 1 cup salsa
  • 1 tbsp taco seasoning
  • 1 (15-ounce) can corn kernels, drained
  • 1 (15-ounce) can black beans, drained and rinsed
  • 2 tbsp chopped fresh cilantro leaves
  • 1 head butter lettuce
  • Reduced-fat sour cream
  • Kosher salt and freshly ground black pepper, to taste

Cook the ground turkey and then drain any grease.  Crumble the turkey and add taco seasoning.  Stir in other ingredients except for the sour cream and then add a few tbsp of the mixture inside of a lettuce leaf.  Top with a dollop of sour cream to taste.

Taco Stuffed Bell Peppers

What you need:

  • 1 pound ground beef
  • 1 envelope taco seasoning
  • 3/4 cup canned kidney beans, rinsed and drained
  • 1 cup salsa
  • 4 medium yellow or green peppers
  • 1 medium tomato, chopped
  • 1/2 cup shredded low fat cheddar cheese
  • 1/2 cup low fat sour cream

Cook the beef and chop finely.  Drain any grease and blot any excess with a paper towel.  Stir in the taco seasoning, kidney beans and salsa. Simmer for 5-8 minutes.  

In the meantime, cut the bell peppers into halves so that they resemble little bowls.  Remove the seeds and then boil the peppers for 3-5 minutes.  After rinsing in cold water, spoon in close to 1/2 cup of meat mixture into each pepper half.  Cover and bake at 350 for 15-20 minutes.

Top with tomato, cheese and sour cream and enjoy!
